About Anasazi Beans
Anasazi Beans have been around for about 1,500 years. They are high in starch, fiber, potassium, folic acid, iron, and protein. Because Anasazi beans are adapted to the arid southwest, they are moderately drought resistant. These colorful beans were named after the Native American tribe in the southwest they lived mostly around Arizona, New Mexico, Colorado, and Utah. Anasazi beans are also referred to as Aztec beans or Cave beans. Anasazi beans have a mildly sweet flavor with a somewhat pasty texture.
