Lentils are one of the smallest types of beans. Sometimes, they can be smaller than the tip of a pencil eraser. Lentils, like most beans are high in fiber, they are great for your heart, they give you energy while stabilizing blood sugar, and give you iron for energy. Lentils are sometimes classified as seeds, but really, they are part of the bean family. Lentils are available in many different varieties; green, brown, black, yellow, red, and orange. When cooked, lentils become soft and mushy, but when they are raw, they are stiff and hard. All kinds of Lentils have a somewhat nutty flavor. Lentils originated in Asia, and have been consumed in prehistoric times. Today, the main producers of Lentils are India, Turkey, Canada, China and Syria.
